A new product from Helix pomatia and the method of its production

The article considers and studies the need to find develop new sources of protein, as well biologically active substances, methods their production processing, used both for obtaining livestock products in other areas human economic activity. One most promising is snail farming, represented by edible species land snails. This covers development a method type raw material from Helix pomatia (grapevine snail) study its qualitative characteristics. All were conducted according standard, generally accepted developed practice. As result research work, grapevine lyophilizate was developed, tested, proposed implemented, which contributes an increased content better nutritional value high quality obtained with long shelf life. indicators took place compared well–known long-established techniques: use dehydrator at temperature +35°C drying cabinet +105°C. analysis chemical amino acid composition showed superiority crude protein within 2.1–2.9 % absolute, therefore, essential acids pomatialyophilizate. Thus, effectiveness established prospect using it various industries activity has been proven.
